In this special Medu Vadas, i have incorporated Methi Leaves (Fenugreek) and Black Gram Lentils with hull. And also have used Spring Onion Greens instead of Red Onion. Isn't it a wonderful one?
Not only is it healthy but also tastes great. It's absolutely awesome as a tea-time treat for your families. They go well with a hot beverage of your choice. These beautiful looking Medu Vadas are so soft and spongy that they just melt in mouth with their lovely texture. The only thing required for these yummy goodies is that the Lentils should be soaked for a good amount of time and ground to a thick paste using as little water as possible. That's the little secret behind these fluffy Vadas.

Wash and clean the Lentils at first. Soak them in enough clean drinking water for atleast 4-5 hours. It's an important step. Or better still overnight. And then grind to a smooth paste using as little water as possible.

Mix in the rest of the ingredients mentioned absolutely well. Heat Oil for frying as required. Shape into Medu Vadas using your thumb making a dent in the centre just like that of a doughnut. Slide carefully into the Oil and deep fry on both the sides until crisp and done.

These get done pretty much quickly and does not require much time at all. Soft and spongy on the inside and crisp on the outside, these are to die for. Enjoy them alongside your favourite dip.
