2tortillas
1 cupscilantro lime rice by sautéed rice with butter, salt, lemon juice, and chopped cilantro
2eggs makes into scrambled eggs
1 cupmixed avocado, bell peppers, red onion, cilantro seasoned with cumin, salt, black pepper, and lemon juice
1 cup cheese

Steps

Heat up the tortilla on both sides. Lay down on the cutting board. Cut a slit to the middle of tortilla

And fill each quarter with rice, avocado mixture, scrambled egg, and cheese

Then start simply fold each quarter into a triangle of quesadilla

It will look like this

Then toast it again to melt the cheese and make it more toasty and crispy.

Transfer to a serving plate and enjoy it right away!
