Basil and Tomato Garlic Rice

I had lots of tomatoes and basil in my garden, so I used them in this garlic rice.
Increase the amount of lemon juice if you want. This is spicy, so if you don't like spicy food, leave out the chilli. The garlic will burn soon after it starts to brown, so keep an eye on it. Recipe by Banbi
Basil and Tomato Garlic Rice

Slice the cherry tomatoes into halves or quarters, depending on their size. Slice the bacon into 1 cm widths.

Put 1 tablespoon of vegetable oil and the garlic in a frying pan. Tilt the frying pan diagonally and fry the garlic over low heat until browned.

Remove the garlic. Add the chilli, bacon, rice, tomatoes and basil to the frying pan in that order and fry. Then, season with Nam pla and salt and pepper.

Sprinkle with lemon juice to finish. Transfer to a serving plate and top with the fried garlic.
