Ingredients

2 servings
  1. 2portions Udon noodles
  2. 100 gramsNagaimo
  3. 2Green onions or scallions
  4. 2 tspUmeboshi paste
  5. 1 tbspGround sesame seeds
  6. 1 tbspKatakuriko
  7. Dashi soup
  8. 600 mlWater
  9. 6 tbspDashi soy sauce
  10. 1Salt

Steps

  1. 1

    Peel the nagaimo yam and grate it. Slice the green onion diagonally.

    Heat dashi soup and thicken with katakuriko dissolved with 1 tablespoon of water. Add the onion and bring to a boil. Turn the heat off and add the ground sesame seeds.

    Transfer the warmed udon noodles into a serving bowl and pour over the dashi soup. Garnish with the grated nagaimo and umeboshi paste on top.
