Ingredients

  1. 1 cupred lentil washed and soaked
  2. 1 packetgluten free spaghetti cooked
  3. 2 tsporegano
  4. 8garlic cloves minced
  5. 1/2 cupyellow onion diced
  6. 1 cupmix veg grated
  7. 1/4 cupmushroom finely chopped
  8. 1 tspred pepper flakes
  9. 1 cuparrabiata pasta sauce
  10. 1/2 cupfinely chopped tomatoes
  11. as neededWater
  12. to tasteSalt
  13. 1 tspBlack pepper powder
  14. 2 tbspParsley chopped
  15. 1 tspLemon juice
  16. 5-6 tbspOlive oil
  17. 1green chilli chopped

Steps

  1. 1

    Cook the spaghetti as instructed on the packet.

  2. 2

    In a large-skillet, add the garlic, onion, oregano, mushrooms, grated veggies, red-pepper, pepper and salt, combined with 2-3 tablespoon olive-oil, also saute about 3-5minutes till the veggies are tender.

    Then add the tomato-sauce, diced tomatoes, water and lentils and stir to blend. Adjust salt. Simmer for about 15-18 minutes or till lentils are cooked. stirr occasionally.

  4. 4

    In another skillet heat remaining olive oil. Add 1 tsp oregano, rest garlic and some pepper flakes and salt. Toss cooked spaghetti. Add some parsley.

  5. 5

    Serve lentil bolognese over pasta, sprinkle with extra red-pepper-flakes, chopped parsley and green chillies. Enjoy !!
