In a large bowl, beat the egg until slightly foamy.
Add the milk, whisking to combine. Add the flour and cinnamon slowly, whisking as you add, until the batter is smooth.Heat a frying pan over medium heat. Add a little butter.
I used circle cutters to form my pancake shape.
Add some of the batter into each cutter.Cook for about 2-3 minutes either side.
Serve with figs, Greek yogurt with honey and a dusting of icing sugar.
