I wanted to make a delicious sweet using the leftover egg whites I always have from making cookies.
This is made with what you usually have at home, but it's surprisingly delicious! Your friends and family will love it.
You can make this while you wait for your cookie dough to chill in the refrigerator.

The egg whites will whip up better if they are cold, so if you won't be using them right away, keep them in the refrigerator until you're ready.

Ingredients

2 servings
  • 2Egg whites
  • 3 tbspSugar
  • 3 tbspVegetable oil
  • 5 tbspPancake mix
  • 1Vanilla extract

Steps

  1. 1

    Prepare the ingredients. Line the baking pan with kitchen parchment paper or oil. Preheat the oven to 180℃ (356 Fahrenheit).

    Beat the egg whites until peaks form, adding the sugar as you go.

    Mix in the vegetable oil.

  4. 4

    Fold in 1/3 of the pancake mix at a time. In the final addition, add the vanilla extract as well.

  5. 5

    Pour into the pan and bake at 180℃ (356 Fahrenheit) for 20 minutes and it's done.
