Set aside a portion of the ampalaya and some of the sauce.

Fry the tuyo or dried salted herring in oil and set aside, with a bit of the oil.

In a pan sauté some onions and garlic in oil. Then add the day old rice. Crumble it to pieces with your (clean) hand as you drop it in the pan.

With a Turner or Spatula, sauté until the individual rice bits are not longer sticking together. Add a few drops of the oil from the fried herring as you do this. This adds a good salty umami flavor to the rice.

Drop in a portion of the Sautéed Bitter Gourd in Tomato dish that you set aside, including some of the sauce. Mix in well. Add a dash of your favorite seasoning, I use Knorr. Season lightly, as the fish is already salty.

Once you are satisfied with the taste and look of the rice, you are ready to plate. Top it with the fried herring.
