This was gorgeous the flavour lingers in your mouth for ages. The smells coming out of my kitchen so nice. I made Basmati rice to accompany the chicken curry. Used Chicken thighs with skin and bone in. I made more of the sauce so could have it with some other meat tomorrow or just veg.

Ingredients

4 servings
  • 6Chicken thighs bone in and skin on
  • 3small potatoes chopped
  • 4 ClovesGarlic
  • 1 tblsGrated Ginger
  • 4Lime leaves
  • 2Shallots chopped
  • 1/2 Cupchicken stock
  • 1+1/2 cups Coconut milk
  • 1thai birds eye chilli
  • 1 tblsfish sauce
  • 2 tspBrown sugar
  • 1cinnamon stick
  • 2 tblsCurry Powder
  • 1/2 tspred pepper flakes
  • 2Star anise
  • 1/2 tspturmeric ground

    Ingredients

    Crush lemon grass, garlic, ginger,and thai chilli in a petal and mortor, until it looks like a paste

    Next stir in curry powder, turmeric and red pepper flakes and 2 tbls veg oil stir in and then coat the chicken thighs all over with it. And leave to marinate for 30 minutes.

    In a large Dutch oven pan with lid add 2 tbls veg oil heat up then add the chicken thighs in skin down leave to cook until browned. Then turn them over skin up and add sliced potatoes and cook for another 5 minutes.

    Next add chicken stock, coconut milk, star anise and cinnamon stick stir to mix. Leave on low for an hour or add to the oven 160°C for 45 minutes until chicken is tender.

    Season with Brown sugar and fish sauce sprinkled over and serve with Boiled Basmati Rice.

Cookpad founder Member Ambassador, Also a Cookaholic.I love this Cookpad Site, Recipes, friends, interesting people and outstanding recipes, and able to see and to taste food from all over the world. i have learned so much more here, spices , herbs and lovely recipes of different cultures. also experimenting mixing different herbs and spices and making my own creations .I have cooked for my family since I was 14yrs, home from school as my Grandmother could no longer cook she was 91yrs, my Dad worked and there was only me so I learned quite quick and have always enjoyed it. I only started experimenting with herbs and spices and items I had never heard of before through joining Cookpad 2014 and I'm still learning new things. It is a passion of mine and I always invite my family around so I can create something new for them to try. my children grew up learning lots from me I have 3 daughters all with their own families and two Sons one who cooks for his family also my youngest son who is still at home with me,he comes up with some lovely meals and ideas so I'm proud of them all. 💜
