  1. 1 cupbulgur wheat
  2. 2red onions or scallions
  3. 2 cupsfresh parsley, chopped
  4. 1 cupfresh mint, chopped
  5. 1 poundred tomatoes, chopped
  6. 1/2 cupfreshly squeezed lemon juice
  7. 2-3 tablespoonsolive oil
  8. Salt
  9. Pepper

    Soak the bulgur wheat in water for 15-20 minutes to hydrate well. After this time, drain the bulgur in a colander and squeeze out the remaining water by pressing the bulgur with a spoon. Add the parsley, mint, and chopped onion.
