Mix flour, salt and sugar dry, and then add melted butter. Mix well.

Press the dough flat at the bottom of a 8x8 pan lined with foil (for easier cleaning). Bake at 350F for 19-24 minutes or until golden brown

Mix cream of tartar, sugar, salt, flour, and eggs. Then add lemon juice and zest.

Cook mixture at medium low heat until mixture is at 160f (5-8 minutes) stir constantly.

Remove from heat and add 4tbsp unsalted butter. Stir until all melted. Strain mixture.

Pour strained mixture in pan. Bake at 350f for 8-12 minutes or until it's set.

Let cool for 1.5 hours. Cut into bars.
