Maghrebi Donuts (Sfenj) ☕

In the bowl of a stand mixer, combine 3/4 cup warm water (about 200 ml), yeast, sugar, and 2 tablespoons of flour. Mix, cover, and let the yeast activate for 5 minutes.

Add the remaining flour and salt, then knead for 5 minutes. Gradually add the rest of the water while kneading for another 10 minutes, until you have a smooth, soft, and sticky dough, similar to pizza dough.

Cover and let the dough rise, punching it down twice. Dip your fingers in oil, form balls about the size of a mandarin orange, and place them on a greased tray.

While the oil heats up, let the dough balls rise a little more.

Oil your hands and use your fingers to gently stretch the dough.

Fry in hot oil over medium heat on both sides, spooning oil over the top as they cook.

Note: Fry only one donut at a time.
