Sweet potatoes always make me think of crumbly sweet potato bites. I tried to come up with an easy recipe for a delicious treat.

Glazing with the honey and egg yolk mixture makes these treats glossy, and also adds a nice smell. They taste just as good as the store-bought. Recipe by sami

One Bowl Sweet Potato Bites with Light Brown Sugar

Ingredients

  1. 1 largeSweet potato
  2. 40 gramsSalted butter
  3. 40 mlMilk
  4. 40 gramsSoft light brown sugar
  5. 1Egg yolk (set aside a small amount for glazing)
  6. 1 tspHoney (for glazing - optional)

Cooking Instructions

    Peel the sweet potato, cut into thin, round slices, and soak in water for about 10 minutes.

    Microwave for about 6 - 7 minutes. Once soft, mash with a folk.

  3. 3

    While the sweet potato is still hot, add in the butter and soft light brown sugar, and kneed it all together. Once mixed, add the milk and mix more.

    When cooled, mix in the egg yolk (set aside a small amount for glazing.)

    Form the mixture into boat-like shapes, and place in aluminium cups. Mix together the reserved egg yolk and a small amount of honey, and glaze the tops. Bake in the toaster oven for about 15 minutes until browned.

    Remove from the toaster oven, coat the tops once more with the remaining glaze, and bake for another 4-5 minutes. This will give them a really nice finish and they will look delicious.

    They puff up and look delicious.
