I used to love to get muffins as a treat with tea or coffee at the coffeeshop, but I started getting sick, and found out I am allergic to wheat and oats. I needed to make them for myself, so this is my version.

I used to love to get muffins as a treat with tea or coffee at the coffeeshop, but I started getting sick, and found out I am allergic to wheat and oats. I needed to make them for myself, so this is my version.
Cooking Instructions

Preheat oven to 350 F.

Combine dry ingredients in a separate bowl.

Cream butter and sugar together.
- 4
Add in egg and applesauce.
- 5
Add dry and spices to the wet ingredients.
- 6
Let it rest for 30 minutes.
- 7
Portion out into prepared muffin tins.
- 8
Bake for 12 minutes.

A back of box recipe for orange cranberry muffins. (Came from a generic store brand of gf flour). Ingles Laura Lynn brand. I didn't have dried cranberries so i used dried cherries. Also, i used butter instead of oil and increased amount by 1/2 T. After melting butter it must come back to room temp before using. These were so good and not too sweet.FYI. You could add 1/2 - 1 t. almond extract to bring out the cherry a bit. I don't add because i don't like almond extract flavor. Heide -

I made some delicious muffins with vegetable oil and almond flour, and wanted to try making an oil-free version. They turned out fluffy, moist and very tasty. The almond flour gives the muffins a rich aroma and they smell amazing when just out of the oven. They were still tasty the next day when chilled. I eat these at work when I feel like having a snack.
