I used to love to get muffins as a treat with tea or coffee at the coffeeshop, but I started getting sick, and found out I am allergic to wheat and oats. I needed to make them for myself, so this is my version.

I used to love to get muffins as a treat with tea or coffee at the coffeeshop, but I started getting sick, and found out I am allergic to wheat and oats. I needed to make them for myself, so this is my version.

Ingredients

12 minutes
12 muffins
  1. 7 1/2 ouncesgluten-free flour
  2. 2 teaspoonsbaking powder
  3. 1 teaspoonxanthan gum
  4. 1large egg
  5. 3 1/2 ouncesplus 1 tablespoon granulated sugar
  6. 1/2 teaspoonsalt
  7. 1/2 teaspoonplus pinch ground ginger
  8. 1/4 teaspoonground cardamom
  9. 1 stick (8 tablespoons)butter
  10. 1 cupunsweetened applesauce, room temperature
  11. 1 teaspoonvanilla extract
  12. 1/2 cupslivered almonds (optional)

Cooking Instructions

12 minutes

    Preheat oven to 350 F.

    Combine dry ingredients in a separate bowl.

  3. 3

    Cream butter and sugar together.

  4. 4

    Add in egg and applesauce.

  5. 5

    Add dry and spices to the wet ingredients.

  6. 6

    Let it rest for 30 minutes.

  7. 7

    Portion out into prepared muffin tins.

  8. 8

    Bake for 12 minutes.
