Cast Iron Crispy Skin Chicken

Ingredients

  1. 3 lbsChicken (Bone In, Skin On)
  2. 2 tspSalt
  3. 2 tspPaprika
  4. 1 tspBlack Pepper
  5. 1 tspGarlic
  6. 1 tspOnion Powder
  7. 4 TbspButter
  8. 6 SprigsFresh Thyme

Cooking Instructions

  1. 1

    Preheat Oven to 450°. Place a deep Cast Iron skillet in the oven to preheat, for at least 10 Minutes.

    Mix all Dry Seasonings in a small bowl. Trim any excess skin off of Chicken pieces. You can use any type of Chicken pieces in this recipe, as long as they're bone in and skin on. Sprinkle both sides of Chicken pieces Liberally.

    With Oven Mitts, carefully remove Cast Iron Skillet from the oven, and place on the Stove Top. Add the butter and Thyme Sprigs. Once Butter is melted and evenly dispersed, add Chicken pieces Skin Side Down. Place back in oven, and Bake for 15 Minutes.

    Remove Skillet from the oven and Flip all Chicken pieces over. Place back in the oven, and Bake for another 15 Minutes. Make sure White Meat reads at least 150° internal temperature, and 175° for Dark Meat. Let Rest for at least 10 Minutes, so that the juices get redistributed back into the meat.

    Plate Chicken then spoon pan juices over the top. Enjoy!
