Prepare and measure all the ingredients.
Place the opened chicken breasts on a sheet of plastic wrap on your work surface, then cover with another sheet of plastic wrap. Pound the chicken breasts with a kitchen mallet until they are thinner and evenly flattened.
Season the inside of the chicken breasts with salt, pepper, and oregano.
Layer the ham on top of the chicken. - 2
Add the cheese, spinach, carrot sticks, butternut squash sticks, and hard-boiled egg pieces.

Roll up the chicken and tie it with kitchen twine.
Season the outside with a little extra salt to taste.
Coat the chicken roll with about 4 tablespoons of flour. - 4
Preheat the oven to 350°F (180°C). Bake the chicken roll for about 50 minutes, or until the internal temperature reaches at least 165°F (74°C).

I served it with stewed chickpeas and a mushroom sauce on the side.

Let the chicken rest for about 7 minutes before slicing into rounds.
