Fish with Spicy tomato watermelon salsa

Ingredients

  1. 2fish fillets
  2. Olive oil
  3. 1lime
  4. Fresh coriander
  5. Fresh hot pepper
  6. Watermelon
  7. Tomato
  8. Hot sauce
  9. Red pepper flakes

Cooking Instructions

    Dry fish and coat with lime juice. Coriander and pepper (fresh or flakes). Let sit

    Chop tomatoes and watermelon into bowl. Add 1/2 lime coriander and chopped d pepper. (Salt and pepper, hot sauce to taste)

    Fry fish in pan 5 min per side. Add lime rinds to the liquid in the pan.flash fry at the end if you want a bit of crisp.

    Spoon salsa over fish and enjoy!
