Dal-Khichdi is a delicious, flavoured and comfort one pot meal with protein rich healthy recipe. I like this one pot nutrients rich delicious food.
Steps

Soak dals and rice. Arrange the ingredients.

Heat ghee in a pan/ pressure cooker. Add cumin seeds and hing. Allow to splutter cumin seeds.

Add onion and fry till translucent.

Mix ginger, garlic and green chilli. Saute till rawness is gone.

Add tomatoes, salt and turmeric. Mix well and saute.

Mix bay leaves, red chilli powder and coriander powder. Add 2tsp water and saute well.

Add the chopped veggies and saute for a minute to mix with masala.

Pour 3 cups of water. Transfer to cooker. Mix soaked dals and rice. Add garam masala. Mix well.

Let the contents in cooker boil. Pressure cook for 1 whistle in high flame. Then cook for 3 minutes on low flame.
When cool down naturally, serve the hot, aromatic and delicious dal khichdi with curd raita.
