Ingredients

  • 200 g (7 oz)salmon fillet
  • 1 TspSalt (to Taste)
  • 1 Tspground black pepper
  • 2 Tbspbutter
  • 1 HeadBroccoli - into Florets
  • 3garlic cloves, minced
  • 1 cupsheavy cream
  • 1/2 cupdry white wine
  • 1 teaspoongrated lemon zest
  • 1Small white Onion Finely Chopped
  • 12Cherry Tomatoes - cut in Half
  • 2 tablespoonscapers - chopped
  • 8nests of Tagliatelle
  • Lemon wedges or Basil Leaves, for garnish

    Bake the Salmon in the oven as normal - I grill mine so can flake into the sauce.

    Cook pasta in rolling boiling water as per packet instructions, At the same time quickly cook the Broccoli in boiling water until cooked - about 5 mins.

    Heat butter in large high-sided skillet over medium heat Cook the onion for 3-4 mins until soft but not brown. Add garlic and cook 1 minute, stirring constantly. Add cream, wine, lemon zest and 1/2 teaspoon salt and 1/2 teaspoon pepper. Heat medium-high, then reduce heat to medium and cook 5 to 6 minutes or until mixture is thickened to a thin sauce consistency, stirring frequently. Reduce heat to low.

    Drain the Pasta and add the Flaked Salmon, drained Broccoli, Cherry tomatoes and Capers. Then Pour in the Sauce. Lightly mix together and Serve while steaming hot with a slice of Lemon or basil leaves. I add lots more black pepper :)
