Besan khaman
The best khaman you’ll eat eat. Do try this.
Steps

Mix all the dry ingredients and oil in a pot

Add water as required

Make a flowy and smooth consistency batter

Add eno and wish vigorously. The batter will foam up and will become light.

In advance set up your steamer and grease your container.
Transfer the batter to the container and put it into steamer without wasting any second. Let it steam for 15-18 minutes. Do not open it before 15 mins. Check with a knife/ toothpick - 6
Lets make the tadka. In a kadhai add oil and rai. Let the rai crackle

Add chopped chilli

Add water

Add sugar. Its ready

Take out the khaman when ready and let it cool completely. Make sizeable cuts and pour the tadka. Its ready serve hot or cold
