Kabocha Squash Dip

I took a dip that is a hit in our home and mixed yogurt into it.

Those who like thick, chunky dips should use strained yogurt. If you prefer a thinner or smoother dip, then leave it as it is. You can also swap out the prunes for raisins. Recipe by suzu-ren

Ingredients

1 serving
  1. 100 gramsKabocha squash
  2. 50 gramsPlain yogurt
  3. 18 gramsCream cheese
  4. 3prunes Prunes
  5. 1 tbspGrated cheese
  6. 1 tbspHoney
  7. 1Salt and pepper

Cooking Instructions

  1. 1

Take the kabocha and remove the seeds and pith. Cut them into bite-sized pieces.

  2. 2

Cook the kabocha! (You can just as easily microwave it)

  3. 3

Cut the prunes into quarters. Bring the cream cheese to room temperature.

  4. 4

Transfer it to a bowl and mash it while it's still hot. I like my dip chunky so I don't really mash it up too much.

  5. 5

Add the other ingredients and mix! Season with salt and black pepper to taste.

  6. 6

I put it on a baguette and put drizzled honey on top.
