Tofu Mochi with Rice Bran

This is a variation of "Okara Mochi with Rice Bran"using tofu. Incidentally, there is the same amount of vitamin B in 2 teaspoons of rice bran, as there is in 1 bowl of brown rice.

You can hardly taste the rice bran after coating the mochi in kinako and light brown sugar (brown cane sugar). Adjust the amount of rice bran to your liking. Adjust the heating time according to your microwave. These mochi are made with katakuriko, so are best eaten straight away. Recipe by miyuki12

Ingredients

2 servings
  1. 100 grams◎Tofu (silken or processed tofu)
  2. 2 tbsp◎Rice bran
  3. 2 tbsp◎Katakuriko
  4. 1 tsp◎Light brown sugar or brown cane sugar
  5. 1Kinako
  6. 1Light brown sugar or brown cane sugar (or any other sugar)

Steps

  1. 1

    Put the ◎ ingredients into a heatproof dish. Mix well until there are no tofu lumps. Lightly wrap with cling film and microwave for 1 minute 15 seconds at 500-600 W.

    Knead the mixture well using a spatula. Microwave for another 30-40 seconds.

    Mix it well again, and then divide into bite-sized pieces. Coat the mochi balls in a mixture of kinako and brown sugar, and it's done.

    I coated these ones with green barley and sugar. It's even healthier with matcha, or something with vitamin C.
