1/2recipe beef birria
Birria de res
7 ouncesOaxaca cheese
as neededwhite corn tortillas
chopped onion, to taste
chopped cilantro, to taste

Heat the tortillas and dip them in the broth on one side. Preferably use white tortillas as they are a bit sturdier and won't break easily.

Add the cheese and a bit of meat. Heat on the griddle until the cheese melts. Serve with chopped cilantro and onion.
