Steps

Start by soaking rice and dal separately for at least 30 minutes. Then wash them properly and drain the extra water.

Next take a pressure cooker,add water, salt, turmeric powder, ajwain,ginger, black pepper powder, sugar and ghee.

As the water comes to boil add the rice and dal into it. Put the pressure cooker lid and cook for 3 whistles at medium flame.

Side by side, prepare for tadka. Cut the veggies, onion, tomato and keep aside.

As the pressure cooker becomes cool, open the lid.Put water to make it semi solid. You can add water as per your wish. Mix to make it even.

Next start tempering. Put a kadhai, add oil and heat. Crackle cumin seeds, add dry red chillies, fresh green chillies, onion and saute.As onion gets little fried, add vegetables of your choice. Next put chopped tomato and mix. Continue sauteing for sometime.

Next add salt, turmeric powder, garam masala, coriander powder, dry roasted cumin and dry red chillies powder and mix. Cover and cook at slow flame till vegetables and tomato softens.

Now add the cooked rice and dal into it and mix evenly.
Add ghee and mix.
Garnish with finely chopped coriander leaves and cover lid. Let it be on slow flame for 2-4 minutes. - 9
Next switch the flame off and let it rest for 2 minutes.
Then... serve hot hot... MASALA KHICHDI IS READY... - 10
Enjoy it with dahi, papad, aachar and green salad.
After serving put some more ghee from top. It's heavenly...a comfort food.
