Ratatouille is a traditional French dish. It’s a simple baked vegetable stew, but it’s packed with delicious flavor and natural sweetness from the vegetables. It’s commonly served with French bread and your choice of protein.

Ratatouille is a traditional French dish. It’s a simple baked vegetable stew, but it’s packed with delicious flavor and natural sweetness from the vegetables. It’s commonly served with French bread and your choice of protein.

Dice all the vegetables and set aside. (Traditionally, eggplant is included, but I didn’t have any at home, so I left it out.)

Heat a pan and add the butter and olive oil. Sauté the garlic and onion with the thyme and bay leaf until fragrant and the onions turn translucent. Add the diced vegetables and cook until they start to soften, then add the canned tomatoes and continue to sauté.

Add a splash of vegetable broth and season with salt, black pepper, and vegetable bouillon powder. Taste and adjust the seasoning as needed. The vegetables and butter will add sweetness, while the tomatoes give a slight tang. Cook until most of the liquid has reduced, then transfer to an oven-safe dish. Top with parsley and grated Parmesan cheese as desired. Bake at 350°F (180°C) for about 20-30 minutes, depending on your oven. (Don’t let it dry out too much.)
