Steamed Meat Dumplings (Qing Zheng Rou Yuan)

Mix the rice flour with 2 cups (480 ml) of water and salt.

Cook the mixture until it thickens, stirring constantly.

Let the mixture cool, then add the tapioca starch and mix until it becomes a sticky dough.

Lightly oil the molds. Spread a layer of the dough in each mold, then add the cooked curry pork filling.

Cover the filling with more dough to seal.

Place the molds in an electric rice cooker with 1 2/3 cups (400 ml) of water in the outer pot. Steam for about 30 minutes, then remove.

Let cool, then remove from the molds. Serve immediately or refrigerate. You can prepare your own sauce to serve with the dumplings.
