Prepare the ingredients. Wash the bell pepper, cut it open, remove the seeds, and dice into bite-sized pieces.

Mix the ground pork with the seasonings and refrigerate for 30 minutes to let the flavors develop.

Wash the mushrooms and remove the stems. Finely chop the stems.

Mix the chopped mushroom stems into the ground pork. Stuff the pork mixture into the hollowed mushrooms. You can make the stuffed mushrooms ahead of time and freeze them; when ready to cook, take them straight from the freezer to pan-fry or bake.

Heat a pan and add 1 teaspoon vegetable oil. Place the stuffed mushrooms in the pan, cover, and cook for 15 minutes. Flip them over halfway through. No need to add water or extra seasoning—the mushrooms will release their own juices. Once the filling is cooked through, remove from heat and set aside.

Bring a pot of water to a boil. Blanch the diced bell pepper for about 1 minute. Remove and set aside.

Add the instant noodles and seasoning packet to the same pot of water used for blanching the bell pepper. Cook until the noodles are just softened, then remove.

Squeeze the fried shallot oil packet from the instant noodles into a skillet. Add the noodles and bell pepper, stir-fry briefly, and plate.
