Peel and chop the garlic and onions. Slice and wash the white part of the leek. In a large pot or deep skillet, heat olive oil and cook the onions, garlic, and leek over low heat, covered, for about 15 minutes until softened.

Meanwhile, slice the potatoes into thin rounds. Add the white wine, tomato sauce, potatoes, bouquet garni, salt, and pepper. Finally, pour in the fish stock. Cover and simmer over low heat for about 1 hour.

Cut the cod into pieces and add them to the pot. Cook for about 10 more minutes. Enjoy!
