Ingredients

  1. 2 poundschicken tenderloins
  2. 3 cupslow sodium chicken broth
  3. 2 cupsquick cook barley
  4. 2small cans rotel hot diced tomatoes and green chilies
  5. Salt and Peppers to taste
  6. 2 bagsfrozen vegitales (Broccoli, Cauliflower, and Carrots)
  7. 1/2 bagfrozen onion celery and peppers
  8. Spices
  9. 1 tbsEVO
  10. 1 tbscurry
  11. 1 tsponion powder
  12. 1 tspgarlic powder
  13. 1 tbscajun spice blend
  14. Salt and Peppers to taste

Cooking Instructions

    Leg pit add EVO and onion celery and peppers over medium heat

  2. 2

    Cut chicken tenberloins into 1 inch cubes then add to pot cook until almost cooked

  3. 3

    Add broth, tomatoes and, all vegetables bring to boil cover and reduce heat until chicken is done

  4. 4

    Add Barley pre-cooked mix well cover reduce the heat and simmer until the barley is well incoroerated

  5. 5

    Serve and enjoy "Note: this is very spicy you can cut the heat by using regular diced tomatoes without the chiles"
