Tofu Burger Stuffed Tomato

I invented this when I was coming up with ingredients to stuff tomatoes with.
Increase the ratio of meat to tofu for a heartier dish. I used chicken breast tenders, but you can try it with pork or pork rounds. Top it with cheese for variety (as shown in photo). Recipe by pomu:

Mince shiitake mushrooms and lotus root. Thoroughly remove excess water from the tofu and cut the chicken tenderloin into bite-sized pieces.

Blend the chicken tenderloin pieces and the tofu in food processor until it makes a paste.

Add meat and vegetables to ● and mix well with a spoon.

Stuff the mixed ingredients into tomato skins. Use the tomato for soup or salad.

Without pre-heating, bake in the oven for 20 minutes at 230℃.

To make the sauce, simmer ■ ingredients in a pan.

Arrange on serving dishes.
