Garbanzo Beans and Beet Salad

I love beetroot, so I created this salad that features the sweetness of raw beet. I'm posting this for my records since it turned out delicious.

When using dried garbanzo beans, soak them the previous day, and boil until tender.

Ingredients

2 servings
  1. 1Beetroot
  2. 150 gramsor more Garbanzo beans (canned)
  3. 1as much (to taste) Your choice of nuts (such as cashew nuts, walnuts, etc.), crushed
  4. 1 dashItalian parsely (finely chopped)
  5. 2 tbspExtra virgin olive oil
  6. 1 tbspLemon or lime juice
  7. 1 tspHoney (optional)

Cooking Instructions

    Peel the beetroot and grate it.

    In a large bowl, toss together all the ingredients, then it's ready.

    Chill it in the refrigerator and serve.
