Ingredients

  1. Part 1
  2. 3 tbspSoy Sauce
  3. 1 tbspChinese Wine
  4. 2 tspBlack Vinegar
  5. 1 tbspRock Sugar
  6. 3Coriander Root
  7. 1 tspChicken Stock Powder
  8. 1 cupwater
  9. Garnish
  10. Ginger 3 inches sliced thinly
  11. Spring Onions sliced thinly
  12. Red Capsicum/Chilli sliced thinly
  13. 2 tbspPeanut/ Vegetable oil

Cooking Instructions

  1. 1

    Sprinkle Codfish with salt on both sides and cure for 10 min

  2. 2

    Place ingredients in Part 1 in a pot and simmer for 15 min

  3. 3

    Wash away salt, pat dry

  4. 4

    Add Chinese wine to both sides of the fish and place on a plate for steaming

  5. 5

    Steam fish for 8 min

  6. 6

    After steaming, discard excess water. Add another scoop of hot water to wash the fish

  7. 7

    Drizzle soy sauce around the fish, not directly on it

  8. 8

    Place Ginger and white part of scallions on top of fish

  9. 9

    Heat oil and drizzle over the ginger and scallions

  10. 10

    Top with green part of scallions and capsicum
