Spinach & Nectarine Salad

I tried to make this similar to a dish at a restaurant. The tender spinach leaves go well with the fruity dressing.

When I uploaded this recipe, I originally made it with a coffee flavor. But then I tried it with cinnamon and it tasted much better, so I changed the recipe. I used apple cider for the apple juice. If you live in the States, I recommend using apple cider. Recipe by Yukirinrin

Ingredients

2 servings
  1. 200 gramsSalad spinach leaves
  2. 1Nectarine
  3. 4 tbspCheese (Feta, Goat, Gorgonzola, etc.)
  4. Dressing
  5. 1Nectarine (ripe)
  6. 1 tbspLemon juice
  7. 1/2 tbspBalsamic vinegar
  8. 3 tbspApple juice
  9. 1/2 tbspHoney
  10. 1 tbspOlive oil
  11. Cinnamon Sugar Raisin Nuts Topping
  12. 100 mlCalifornia Raisins
  13. 100 mlWalnuts, pecan, etc.
  14. 1 tspCinnamon powder
  15. 2 tbspGranulated sugar
  16. 1 tbspWater

Cooking Instructions

    Make the dressing. Place all of the ingredients into a food processor and puree. Then let it chill.

    Add the cinnamon, granulated sugar, and water to a frying pan. Turn on the heat and once it comes to a boil, lower the heat to low. Add the raisins and nuts, and stir as it cooks. Once the liquid evaporates and everything is coated with the cinnamon sugar mixture, remove from the heat. Spread it out so that it doesn't stick, and let it cool.

    Thinly slice the nectarine for the salad with the skin on. Finely crumble the cheese. Pile the salad type spinach leaves on a plate and top with the nectarine and cheese. Drizzle on the dressing. Lastly, top with the cinnamon sugar raisin nuts.
