Smoked Chicken

This chicken was the star of our Juneteenth celebration, and I'm pretty sure will make an encore performance for our Fourth of July celebration as well.

Ingredients

  1. 3whole chicken cut in half. Sub leg quarters if you like (8)
  2. Salt
  3. Pepper
  4. Garlic powder
  5. Paprika
  6. Onion powder
  7. Yellow Mustard
  8. Apple juice
  9. Charcoal
  10. Wood

Cooking Instructions

    Light your smoker. You want to be around 220-225 degrees Fahrenheit.

    Blend your dry seasonings in a small bowl. Set aside.

  3. 3

    Prepare the chicken by cleaning up any extra fat, or loose pieces that may burn while cooking.

    Apply a small amount of mustard to the outside of the bird. If you hehe gloves this will be a good time to use them.

    Once the chicken looks slightly yellow, apply the dry seasonings liberally.

    Put the chicken on the smoker. I have an offset smoker, so I place my chicken on the center. It goods equal smoke and heat here.

    Cook the chicken low and slow at 225. Spray the chicken with apple juice or your favorite basting liquid every 30 - 45 minutes to ensure they don't dry out.

    Once your chicken is cooked, let it sit for 15-30 minutes before you cut into it.
