My mother used to make this salad a lot, and it became my favorite dish.

Cut the eggplants into thin round slices. Thinly slice the onion, and rip up the lettuce into bite-sized pieces.

Heat oil in a frying pan, and stir-fry the eggplants. Transfer to a bowl and let them cool off. In the meantime, mix the ● ingredients, and set aside.

When the eggplants are mostly cooled, serve on a plate. Pour the ● dressing on top, and enjoy.
