Great with Rice! Vegetable-Rich Bulgogi

I tried marinating vegetables together with the meat in(Spicy Seven-Flavor Stir Fried Beef) and it was delicious, so I adjusting the flavoring to turn it into bulgogi and uploaded the recipe.

Once everything is cut up, you just need to marinate it all together and cook it, so it's very easy. The flavors are on the sweet side, so it's recommended for children too. If you like it spicy, add more chill pepper. Recipe by Mekamahao

Ingredients

3 servings
  • 250 gramsThinly sliced beef (coarsely chopped or offcuts)
  • 1/2 largeOnion
  • 1/3 largeCarrot
  • 2Green peppers
  • 50 gramsShimeji mushrooms
  • Marinade
  • 1Japanese leek
  • 1 cloveGarlic (finely chopped)
  • 1 pieceGinger
  • 1 tbspRoasted sesame seeds
  • 3 tbspSoy sauce
  • 4 tspSugar
  • 1 tbspSake
  • 2 tspHoney
  • 1 tbspSesame oil
  • 5shakes Pepper
  • 1 tspor (to taste) Chili pepper flakes (medium or coarse grind)
  • 3shakes) (or use Ichimi spice instead

Steps

  1. 1

    Julienne the vegetables. Cut the root off the shimeji mushrooms and shred.

    Chop up the leek. Mince the garlic and ginger.

    Cut the beef into easy to eat pieces

    Put all the marinade ingredients into a bowl and mix together. Add all the vegetables and meat to the bowl, and rub in the marinade with your hands.

    Cover the bowl with plastic wrap, and marinate for about 15 minutes in the refrigerator.

    Stir fry everything in a wok or pan over medium heat while separating out the clumps of meat (its more like simmering rather than stir frying.) There's no need to add oil to the pan.

    When the meat is cooked through it's done! Serve with rice and enjoy.

    It's also delicious served on top of rice to make a bulgogi rice bowl.
