Nice eggplant, potato and meat baking recipe for the family meetings.
Steps

Peel the potatoes, onion and eggplants. Then slice the eggplants and the potatoes around 1cm thick on the longest side.

Fry the onion and the meat with olive oil around 10 min stirring frequently

Fry the potatoes and the eggplants separately for 10 min

Using a deep oven container add layers of potato and eggplant slices on top of eachother

Add the tomato fill the empty spaces between layers

Spread the minced meat on top and cover all the containers surface

Add the bechamel uniformly on top and spread it.

Add the cheese powder on top

Bake for an hour at 200°c

Let it rest for 10 min and serve
