Badam Burfi / Almond Fudge

Badam burfi is a traditional sweet prepared using almonds. This sweet is made using very few basic ingredients easily available in your kitchen only. It takes little bit of time and patience but it is worth trying this melt in mouth delicacy for festivals.

Badam burfi is a traditional sweet prepared using almonds. This sweet is made using very few basic ingredients easily available in your kitchen only. It takes little bit of time and patience but it is worth trying this melt in mouth delicacy for festivals.

Soak almonds for 6 hrs or overnight. Strain water and peel them. Grind it a bit then add milk to it and grind it again to a smooth paste.

Now add sugar and water to a pan. Keep cooking it on medium heat stirring frequently. Cook until pearl consistency sugar syrup is achieved. Now add almond paste to it and mix well.

Keep cooking on medium to low heat. After cooking for 10 minutes, add 1/4 cup ghee and mix well. Keep cooking and stirring. Again mix 1/4 cup ghee after 10 min. When it becomes thick and starts leaving the pan, add last 1/4 cup ghee and keep cooking and stirring.

Cook until it becomes thick and it comes together in the centre of the pan. Grease a square container or a round plate and add the mixture to it. Spread it with the bottom of a greased steel bowl. Try to spread it as evenly as possible. Cut it into desired shape and leave it to cool completely.

After it cools down, remove the pieces from the tin and garnish it with some almonds and rose petals.
