Bread: Combine flour, sugar, yeast, and salt in a bowl. Add milk and egg. Mix until it becomes a cohesive dough. Then cover and let sit for 15 minutes.

Add the softened butter and mix until it is fully absorbed by the dough.

Transfer the dough onto a work surface (lightly flour the surface and your hands if the dough is too sticky to handle). Knead for about 10 minutes or until the dough is smooth, elastic, and not sticky.

Cover the dough in a bowl. Let it ferment for about 1 hour.

Punch down the dough and divide it evenly into 10 pieces. Shape each piece into a ball. Cover again and let them rest for 15 minutes.

Flatten each piece then re-roll into a smooth ball. Arrange them on a lined baking tray. Cover and proof for another hour or until they grow 1.5x bigger.

Combine 1 tablespoon of whisked egg and 1 tablespoon of milk. Brush the mixture onto each dough. Bake in a preheated oven at 350°F (180°C) for 15-18 minutes. Let cool completely on a wire rack.

Matcha cream: Beat the whipping cream, sugar, and matcha powder until stiff peak.

Slice each bun diagonally but not all the way through. Fill the buns with the matcha whipped cream.

Dust the top of each bun with a little bit of matcha powder. Serve and enjoy!
