Cooking Instructions
- 1
Boil the sōmen noodles to a firm texture, drain, and rinse. Cut the vegetables, squid, shrimp, or pork into bite-sized pieces. (Other than the bean sprouts or Chinese chives, any ingredients will do!)
- 2
Heat the oil in a frying pan, pour in the beaten egg, and scramble. Transfer to a plate.
- 3
Add more oil to the frying pan and stir-fry the finely chopped leak and garlic until fragrant. Add the squid, shrimp, pork, and aburaage or atsuage and stir-fry.
- 4
Turn the heat to high and add the vegetables and takuan. Lightly stir-fry, then add 1/2 teaspoon of chicken soup stock granules dissolved into 1/4 cup of water. Add the boiled sōmen noodles and quickly toss.
- 5
Season with soy sauce and sweet chili sauce. Add the eggs from Step 2, transfer to serving plates, and top with the chopped peanuts to finish. Drizzle with sweet chili sauce and top with lemon to taste.

I wanted to cook with nutritious komatsuna greens in an Asian fusion dish.☆ In Step 3, drain the somen noodles well.☆ In Steps 5 and 6, do not take too much time when cooking or the dish would become watery.☆ In Step 6, after adding the komatsuna, just mix lightly as it will cook in residual heat.☆ Squeeze a lemon just before serving if you prefer. Sugar free Pad Thai with brown rice noodle Sugar free Pad Thai with brown rice noodle
Restaurant pad Thai is always packed with sugar and oil which is not healthy. The trick to make this dish really sugar free yet not compromising its flavor is to release natural sugar from carrots and onion by sautéing them in a wok for longer time until they are nearly caramelized. Pad Thai: Thai-style Stir fried Noodles Pad Thai: Thai-style Stir fried Noodles
I watch the people in the food courts of Bangkok and Singapore make this so quickly and skillfully with amazement.I've cut down on the spice. If you like it spicy, add some Thai chili pepper powder or chili flakes at Step 3, or serve the noodles with some chili powder on the side. Mix it in as you eat!Rehydrate the sen lek (Thai rice noodles) following the package instructions. If you use boiling water the noodles will melt so be careful. It's safest to rehydrate them in cold water for 2 to 3 hours, even though it takes time.Work through Steps 2 to 4 in one go. Speed is of the essence during these stages!Serve the noodles with raw Chinese chives and bean sprouts to make this even more authentic! For 2 servings. Recipe by Koyokkoyo cookpad.japan -

Thanks to Recipe Tin. I used coconut noodles to make it low carb and it was delicious. I reduced coconut sugar to 1 tbsp and it made little difference to the final results. There is fish sauce, otherwise vegetarian. 2 Cancerians cook, Libra eats -

Thai-style Somen Noodles With Fish Sauce Thai-style Somen Noodles With Fish Sauce
I wanted to try another Cookpad recipe that called for pork and Chinese chives, but I only had ground pork. (Rats!) But I decided go to go through with cooking anyway, and it turned out delicious! The soup/sauce is mixed with the somen noodles so it should be very well flavored. The soup prevents the somen noodles from sticking together. You can omit the lemon juice if you like, but the flavor is much better with it added in. For 3-4 servings. I tried to make this recipe because my husband requested a Chinese style rice bowl.Bring the meat and vegetables to room temperature to make the dish crunchy and less watery. It might be bit salty when you taste it, but it will be fine on top of rice.(The picture above is a version with frozen mixed seafood. Just defrost it and sprinkle with a little sake.) Recipe by Puriman cookpad.japan
