Rogan josh is one of my most favorites at pakistani restaurants until I discovered its restaurant version. These days, I make them very often as the whole family has fallen in love with this dish. This tastes so good and is an exact replica of its restaurant version, maybe even better.
Now this is one of my go-to recipes for special occasions and get-togethers. A great crowd pleaser when you’re short on time. And this even makes a simple weeknight dinner when paired with roti, naan, or steamed rice.
You can even freeze this curry for busy days and just reheat before serving.

In spice mixer,add black cardamom,green cardamom,fennel seeds,cloves,mac,white cumin seeds,bay leaves, black peppercorn and cinnamon stick grind all spices set aside.

In a large pot heat up the oil add brown crushed onions stir 1 minute add mutton cook 5 munite add salt and (1 tsp spices powder grind earlier) mix well add 1/2 cup of water cook for 25-30 minute in a low flame.

Add tomatoe puree, kashimiri red chili powder,ginger powder, coriander powder mix well and cook 10 minutes in a medium flame.

Add remaining ground spices,yogurt mix well Add 1& 1/2 cup of water, or (how much gravy you want) cover and cook for 25-30 minutes or until meat is tender.

Adjust salt in the gravy,add garam masala powder and cover let it simmer for 4-5 minutes.
Garnish with fresh green coriander. - 6
#Tip:
If you don't have canned tomatoes use 1/2 cup of yoghurt or 4 to 5 fresh tomatoes and make a puree then use.
