Preheat the oven to 180’C.

In a small pot, sauté the mushrooms. Keep juice separate for the sauce.

Heat the oil in a pan and fry the russians until brown.

In a medium pot, melt the butter.

Add the flour bit by bit and whisk in over low heat into the butter.

Add the milk bit by bit and whisk in over low heat, allowing time to thickening in between.

Add the mushroom juice, yogurt, salt and pepper.

In an oven dish, layer the mushrooms and russians.

Pour the sauce over the mushrooms/russians and bake for 30 minutes.

Serve with couscous or rice.
