Ingredients

  1. Cake
  2. 1 cupall-purpose flour
  3. 1 cupgranulated sugar
  4. 1/2 tspsalt
  5. 1/2 cupbutter softened
  6. 2large eggs
  7. 2 tbspsfreshly squeezed lemon juice
  8. 1 tbspfresh lemon zest
  9. Glaze
  10. 1 cuppowdered sugar
  11. 1 1/2 tbspsfresh lemon juice
  12. 2tsps lemon zest

Cooking Instructions

    Preheat oven to 350F/180C. Grease a baking pan (round: 11cm diameter or square: 20x20cm) with butter or non-stick spray.

    In a large bowl, stir flour, sugar and salt together.

    Add softened butter to flour mixture, stir with a spatula until combined.

  4. 4

    In a small bowl, whisk together the eggs, lemon juice and lemon zest. Pour mixture into the flour mixture. Stir with a spatula until smooth and combined. (A few lumps may remain).

    Pour batter into prepared baking pan and spread out evenly. Bake 25 minutes.

    Remove from oven and let cool completely before glazing.

    Once the cake has cooled completely, cut it into triangles or bars. Whisk together glaze ingredients until smooth. Pour over cooled brownies. Let the glaze set before serving. Store in the fridge.
