It's Summertime! Chilled Corn Soup from Corn-on-the-Cob

I had a craving for chilled soup!

Be sure to remove the bay leaf before blending with your Bamix hand blender.
For efficiency, try using a rubber spatula when straining! Parsley is good for garnishing, but try croutons, too!! It's delicious even without it, but a tiny dollop of heavy cream brings out the richness. Recipe by Michan

Ingredients

2 servings
  1. 1ear Corn
  2. For the seasoning:
  3. 200 mlMilk
  4. 1/2cube Boullion cube
  5. 1leaf Bay leaf
  6. 1Salt and pepper

Steps

  1. 1

    Boil the corn for about 15 minutes.

    When tender, remove kernels from the cob with a knife.

    Heat the milk, bay leaf, and consomme bouillon in a pot on low heat, without boiling. Remove bay leaf when well heated.

    Blend corn and soup stock evenly with a Bamix hand blender.

    Strain to produce a creamy texture. Sprinkle with a pinch of salt and pepper to taste.

    Chill well and add parsley or any favorite garnishing, and serve!
