Green chutney : wash coriander leaves & mint. take them in a mixer jar.add green chillies, tamarind pulp, ginger & salt.blend to a fine paste with the help of water. remove in a bowl. keep aside.

Prepare vinegar - chilli water by mixing vinegar, chopped green chillies & salt. keep aside. chop capsicum - onions into thin & long stripes.keep it in fridge till use. cut cabbage 🥬 into thin strips & place it in a bowl of chilled water.

Frankie dough : take maida, add oil & salt.mix with fingertips. add buttermilk & bind to a soft dough. cover & rest the dough for 30 minutes. then knead the dough with the help of little dry flour. pinch into equal size balls.

Take a ball & roll it into a big chapati. cook it on a hot tawa with the help of a little oil. remove & keep it aside covered in a cloth.

Frankie masala : take out frankie masala in a bowl.keep aside.

High Protein Roll : boil potatoes & peel & grate them. crumble paneer.take oil & butter in a pan. add jeera& saute. add tomato ketchup, red chilli sauce, turmeric powder, red chilli powder & dhaniya jeera powder.saute.

Add chopped capsicum & saute. add grated potatoes & mix well. add salt.mix & switch off the flame. lastly add grated paneer & cool completely.

Add coriander & Frankie masala & mix. shape into flat & oval cutlets. the mixture will yield 4 cutlets. cook the cutlets in little oil on both the sides. remove & keep aside.

Assemble : warm 1 chapati. take it on a flat surface. apply green chutney in the centre.

Place cabbage, onions & capsicum on the chutney. sprinkle frankie masala on it. place a cutlet on it.

Fold the chapati in a tight roll securing the veggies & cutlet firmly inside. cover the Kathi Roll / frankie in a paper napkin. serve. make 3 other Kathi Rolls / Frankie the same way.
Tips
1) Buttermilk makes the chapati stay soft for a long time .
2)Store the Frankie Masala in an airtight container in fridge.
3)You can make chapati 1 day in advance & cover & keep in a box in fridge .
4) This recipe will yield 4 Kathi Rolls .
5) Use less salt , as Frankie Masala contains chat masala in it .
