Rösti Swiss Mashed Potatoes

This is my favorite dish from when I studied abroad in Switzerland. They often eat this there, but I wanted to enjoy it in Japan as well, so I bought a rösti slicer to bring home.
You can make it your own by adding some sautéed onions, bacon or cheese. You could even top them with a sunny-side up! Recipe by eritami
Rösti Swiss Mashed Potatoes

Steps

The day before, boil the potatoes with the skins on and cool.

Peel the potatoes, then slice with a rösti slicer (but if you don't have a slicer, you can use a knife to finely shred it).

Add half of the butter in a heated frying pan and add half of the shredded potatoes from Step 2. Spread it out into a disc.

Evenly spread out Step 3, then top with salt, pepper, and the remaining potatoes.

Heat over low-medium heat for about 10 minutes while occasionally pressing gently down on the top with a spatula.

Use a plate to help flip it over, then cook the other side the same way for about 10 minutes over low-medium heat.

It's ready when both sides have a delicious yellow color! Transfer to a plate and enjoy!

Variation: Add sautéed onion, bacon, cheese, etc. during Step 2. Adjust the salt accordingly.
