Banana Soy Milk Smoothie without a Mixer

When my daughter went off her banana kick, she left one sitting in the fridge. One morning, we were out of breakfast tea and milk. We had soy milk, but since my husband won't drink it straight, I just whipped this up, since I was pressed for time, and it was a hit!

If the banana and soy milk are chilled, you only need little bit of ice. Since you'll be using a whisk, the bigger the bowl, the better. The more lemon juice, the more refreshing it is, so adjust the amount to taste. If the banana is ripe, or if you want to reduce the calories, omit the sugar. Recipe by Mogucchi

Ingredients

2 servings
  • 1Banana
  • 300 mlProcessed soy milk
  • 1/2to 1 teaspoon Lemon juice (See Helpful Hints)
  • 2to 3 drops Vanilla extract
  • 1 tspSugar (Lakanto S sweetner) (See Helpful Hints)

Steps

  1. 1

    Break up the banana into a large bowl. Sprinkle on lemon juice right away to prevent discoloring.

    Mash with a whisk.

    After 2 to 3 minutes, the bananas should have a paste-like consistency.

    Add in the soy milk!

    If you incorporate air into the mixture while whisking, it will become thick and creamy in about 3 minutes. When it reaches your desired consistency, add 2 to 3 drops of vanilla essence.

    Pour into a cup filled with ice, then drink up.
