First, wash the cashews thoroughly in water 2-3 times. Soak them in water for 2 hours.

Drain the cashews and place them in a blender or food processor. Pulse until ground. If there are large pieces left, add 1 to 2 tablespoons of milk and pulse again, stopping and scraping as needed.

Transfer the cashew paste to a heavy-bottomed pan. Add the powdered sugar and mix well. If you see small cashew pieces, transfer the mixture back to the blender and pulse again. If the paste isn't smooth, add 2 tablespoons of milk and blend until smooth.

Return the mixture to the pan and cook over low heat, stirring constantly, until it thickens and starts to leave the sides of the pan. Add ghee, 1 teaspoon at a time, while cooking to prevent sticking and to give a shiny finish. Mix in the cardamom powder. When the mixture forms a soft dough, turn off the heat.

Place the mixture onto a greased plastic sheet and knead it until smooth. Grease a rolling pin with oil and roll out the mixture to your desired thickness. Apply edible silver leaf on top if desired.

Once completely cool, cut the Kaju Katli into diamond shapes. Your homemade Kaju Katli is ready to serve!
