Wild Game Italian Sausage
A good friend and hunting partner gave me a version of this recipe and I made some slight adjustments for my taste.
Cooking Instructions

Combine the pork and wild game in a meat tub.
- 2
Mix all ingredients into the meat.
- 3
Course grind the meat.
- 4
Hand mix the coarse-ground meat.
- 5
Grind the meat again with a medium plate.
- 6
Package and freeze.
- 7
This is a fairly spicy sausage so adjust the cayenne and red pepper flakes if you want a milder taste.

I make at least 2 batches at a time so I only need to make it once per year.
