Firstly, wash and soak rice for 30 mins. Now, take a pot add water and heat it till it gets boiled. Once water is boiled then add salt and rice in it. drain the water from it when rice is 80% cooked. Keep aside for 15-20 minutes.

Heat pan with oil when it is heated, add roast peanuts and cashews until it turns crunchy. Keep aside fried peanuts and cashews.

In the same oil add mustard seeds, asafoetida, urad dal,
chana dal, curry leaves, green chilly, ginger paste. Splutter the tempering on low-medium flame. - 4
Also, add turmeric and saute it. Add cooked rice and salt mix well all the ingredients.

Further add lemon juice. Garnish it with coriander leaves. Finally, lemon rice is ready. Serve it with papad, chips or crisps.
